Murphy's Vegan Mushroom Gnocchi Ingredients: 1 kg gnocchi 2 tbsp olive oil mixed wild mushrooms, thickly sliced, quantity to taste (recommend any of the following: shiitake, portobello, porcini, oyster) 3 shallots, minced 1 cup vegetable stock 1 tsp thyme Instructions: 1. Cook gnocchi in a large pot of boiling water, drain, set aside 2. Heat olive oil in a large wok or pan. Add mushrooms and shallots, cook over high heat. 3. Add vegetable stock and thyme; bring to a boil. 4. Add gnocchi and simmer, stirring until the vegetable stock is absorbed. 5. Serve it! Notes: If you don't care about it being vegan, fold in some grated parmesan cheese at the end and keep on the stove until it melts in. Much delicious.
